This healthy no-bake vegan lamingtons recipe features no-bake vanilla cake bars layered with easy raspberry chia jam filling, dipped in velvety chocolate icing and coated in desiccated coconut!


Enjoy this gluten free, raw dessert treat inspired by a classic, famous Australian food that is often eaten around Australia Day or National Lamington Day, on July 21st.


Lamingtons consist of a fluffy vanilla sponge cake dipped in chocolate and coated in desiccated coconut. They can also come in a few different varieties: Sometimes lamingtons are filled with a layer of berry jam and whipped cream. They can also be dipped in a strawberry or raspberry glaze instead of chocolate to create pink lamingtons!
It is believed that the lamington was invented in Queensland Australia in 1901 by Lord Lamington, (the state governor at the time.) His maidservant accidentally dropped sponge cake into melted chocolate so Lord Lamington suggested to coat the cake in coconut. The lamington was born! Alternatively, New Zealand scholars have claimed that the lamington concept was taken from a similar dessert in their country called a ‘wellington’, which Lord Lamington had tried when visiting New Zealand.
Traditional lamingtons are made from vanilla sponge or butter cake containing eggs, butter and dairy milk. Therefore the classic lamington is not vegan-friendly. However, this healthy lamington recipe below is a great dairy free, egg free and gluten free alternative!
These raw vegan lamingtons will last for months kept in the freezer or a few days if kept in the fridge.

Raw Vegan Lamingtons (Gluten Free)
INGREDIENTS
Vanilla 'Cake'
- 1 cup raw cashews
- 3/4 cup desiccated coconut
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1 pinch salt to taste
Raspberry Filling
- 1/2 batch Raspberry Chia Jam see NOTES for recipe*
Chocolate icing
- 2 1/2 tbsp cacao powder
- 2 1/2 tbsp maple syrup
Coconut to coat ( ~1/4 cup )
Instructions
- In a food processor or blender, process the vanilla cake ingredients together into a moist dough (be careful not to overblend or it will become too oily.)
- Form the dough into a 9cmx22cm rectangle, slice to create 3 long columns and 4 rows forming 12 mini rectangles.
- Dollop 1 tsp of jam onto a rectangle, sandwich with another rectangle placed ontop. Repeat until you have 6 lamington sandwiches, place on a plate lined with baking paper in the freezer until firm (atleast 5-10 minutes.)
- Mix chocolate icing ingredients in a bowl until smooth. Coat each lamington slice in the chocolate mixture then cover in dessicated coconut and return to the plate.Place lamingtons in the fridge/freezer until the chocolate is no longer sticky to the touch then enjoy.
