When it comes to Anzac biscuits are you team chewy or crunchy?

ANZAC stands for Australia and New Zealand Army Corp and these sweet biscuits were sent abroad to the ANZAC soldiers during WW1, because they kept well during transportation and the ingredients didn’t spoil easily. Anzac biscuits are traditionally made with plain flour, desiccated coconut, butter, golden syrup, sugar, bicarb and hot water. However you can now make this version that is refined-sugar free, dairy free and made with wholemeal oat flour for the perfectly chewy, Vegan Anzac biscuits (also known as Anzac biccies).
And if you’re not from Australia then ‘biccies’ are what Australians call biscuits, which you may know as cookies.
Vegan ANZAC Biscuits Ingredient Substitutions
If you use certified gluten free oats in this recipe then yes, these biscuits will are gluten free!
Feel free to use your preferred nut or seed butter of choice. Peanut butter gives them delicious nutty taste but a more mild nut butter such as cashew or almond butter work perfectly with a less overpowering flavour. You could use sunflower or pumpkin seed butter for a nut-free version, the taste will slightly vary depending on what you use.
I mean look at that chewy goodness… can we just take a moment.

Chewy Vegan Anzac Biscuits
INGREDIENTS
Dry ingredients
- 1/2 cup oat flour (1/2 cup oats ground into a flour)
- 1/2 cup rolled oats see notes for GF
- 1/4 cup desiccated coconut
- 1/2 cup coconut sugar
Wet ingredients
- 3 tbs smooth nut butter**
- 1 tbs molasses or golden syrup
- 1/4 tsp bicarbonate of soda
- 3 tbs water
Instructions
- Preheat oven to 180 degrees C (160 degrees C fan-forced).
- Combine dry ingredients in a medium bowl and set aside.
- Heat molasses and nut butter in a small saucepan until melted and combined into a smooth mixture. Remove pan from the heat and add the bicarb soda and water to the mixture, stirring to combine.
- Add wet mixture to the bowl of dry ingredients and mix to form the cookie dough.
- Place heaped tablespoon sized balls onto a lined baking tray and flatten slightly. Bake for 15-20 minutes or until golden brown.
- The biscuits will be quite soft straight out of the oven, so leave them to cool completely and they will harden up, before transferring to a container (or your mouth.)

This recipe is to DIE FOR !! I made the Anzac biscuits with peanut butter which added a really nice flavour to the traditional cookie. They were so quick and easy to make however if you are like me, you may have eaten most of the cookie dough before it enters the oven! Thank you Georgia for such a rad recipe, am definitely going to be using this one in the future xx

Amazing recipe! 10/10 would recommend, I used crunchy peanut butter which worked so well. I did only bake mine for 8 mins as they were starting to burn a little on the edges but this could be to do with my oven!

100/10!! This recipe is absolutely amazing! It’s slightly crunchy on the outside and soft on the inside, an amazing combo! I added some chocolate chips to mine and they tasted great warm since the chocolate melted in my mouth. I made some for my family and they loved it too, would definitely recommend these,
