Easy vegan protein pancakes (without protein powder!) infused with peanut butter goodness…
Gluten free, oil free, wholesome vegan pancakes never looked so easy… get ready for some quick and delicious Peanut butter blender pancakes!
These peanut butter protein pancakes are:
- Simple
- Nutty
- Healthy
- Satisfying
- Delicious
- Protein-packed!
These would make the perfect lazy weekend breakfast or even on a week day! You can cook them in advance and then put in the fridge/freezer, ready to heat up, stack up and enjoy any day of the week. Who says pancakes are just a weekend thing?
Substitutions
Peanut butter doesn’t need all those extra oils, sugar and thickeners added. It’s best to use a peanut butter made from 100% peanuts or simply peanuts and salt. It’s just as delicious and even more flavourful this way. You can even make your own nut butter at home which allows you to adjust everything to taste and know exactly what the ingredients are.
In this recipe oat flour also works amazing as a flour substitute. Other flours like regular plain flour may also work fine, so if you try using a different flour leave a comment below letting everyone know how it goes!
To keep this recipe refined sugar free you can try using date, rice malt or maple syrup instead of whole dates.
I used dried dates in this recipe as they are cheaper and more easily accessible but fresh medjool dates should work just the same.
If you use a liquid sweetener like mentioned above, you wouldn’t even need to blend the mixture, you could simply mix the dry ingredients in a bowl, add the wet ingredients and fold through until fully incorporated. Otherwise a food processor with a small bowl may work in breaking up the dates until smooth – however try not to over blend/process the mixture as the pancakes won’t turn out as fluffy.
I love serving these vegan protein pancakes with berries, coconut yoghurt and of course extra peanut butter… mmmm but they would also be delicious with sliced banana and maple syrup or chia jam!

Peanut butter protein pancakes
INGREDIENTS
- 1 cup buckwheat flour see notes*
- 1/2 tsp baking powder
- 25 g dates dried, about 4
- 1 tbsp peanut butter
- 1 cup non-dairy milk
- 1/4-1/2 tsp salt see notes**
- 1 tbsp apple cider vinegar (optional)
- 1 tbsp chia seeds (optional)
to serve (optional)
- drizzle of peanut butter
- sprinkle of cacao nibs
- sprinkle of raw buckwheat
- berries fresh or frozen
- sliced banana
- drizzle of maple syrup
Instructions
- Blend all ingredients in a blender until smooth.
- Pour 1/4 cup of mixture in a non-stick frying pan for each pancake and cook on a low-med heat for 2-3 minutes on each side.
