Cauliflower Rice Vegan Sushi Tips & FAQ’s
Nori is a type of seaweed which are a type of algae. Algae are photosynthetic creatures, but they are not a plant, animal or fungi. Seaweed is a great dietary addition, especially for those living a vegan lifestyle, due to being an excellent source of B12, vitamin A and iodine.
Vegetables like carrot, cucumber, cabbage and add a nice crunchy texture to your sushi. Other ingredients like sweet potato, tofu, avocado, mushrooms can add a soft creamy element and kimchi packs a punch of flavour!
Cauliflower is perfectly safe to eat raw and very nutritious to do so. Cruciferous vegetables like cauliflower and broccoli are high in fibre which the bacteria in your gut loves to utilise that fibre for energy, resulting in gas. If you find raw cauliflower difficult to digest then you can lightly steam or sauté it for a few minutes which helps break it down making it easier to digest.
Yes it is generally more affordable to buy a cauliflower and turn it into ‘rice’ yourself since you’re not having to pay for the processing aspect of pre-prepared packaged cauliflower rice. Homemade DIY cauliflower rice will also be more fresh and nutritionally dense than store-bought.

How to make cauliflower rice vegan sushi
- Make cauliflower ‘rice’
Grate or blend cauliflower in a blender / food processor into a rice texture.
- Add rice onto nori sheet
Spread a layer of cauliflower rice onto a nori sheet and firmly press down flat.
- Add sushi fillings
Add your sushi fillings of choice onto the rice.
- Roll sushi
Roll nori sheet up with your hands (using a sushi mat if preferred) and seal with water

Raw Vegan Cauliflower Rice Sushi (Gluten free, Keto)
INGREDIENTS
- 150 g cauliflower florets ~1/4 of a head of cauliflower
- 1 nori sheet
- 1/4 of an avocado sliced
- 1/2 cup julienned vegetables of choice capsicum, carrot, cucumber, red cabbage, green onion
Dipping sauce of choice
- Tahini sauce (optional) See notes for recipe*
- Peanut Satay sauce (optional) See notes for recipe*
- Soy sauce, Tamari, Coconut/Liquid aminos etc. (optional)
Instructions
- Grate cauliflower using a grater to create small bits the size of grains of rice. (Use a blender or food processor if you have one to speed up the process. Add the cauliflower florets to your blender/food processor and pulse until you achieve a rice-like texture.)
- Place nori sheet shiny side down on a flat board or sushi mat. Top about 3/4 of it with a layer of cauliflower rice. Press the rice down firmly (the layer should be about 1cm high.)
- Top with a handful of vegetables/filling of choice along one side of the sheet.
- Start rolling the nori over the filling ingredients, using your fingers to press down as it rolls up. Wet your finger and dab the top end of the nori with water to seal. Allow the roll to sit for a minute or two, seam side down before slicing and enjoy with dipping sauce of choice.
