150gcauliflower florets~1/4 of a head of cauliflower
1nori sheet

Instructions
Grate cauliflower using a grater to create small bits the size of grains of rice. (Use a blender or food processor if you have one to speed up the process. Add the cauliflower florets to your blender/food processor and pulse until you achieve a rice-like texture.)
Place nori sheet shiny side down on a flat board or sushi mat. Top about 3/4 of it with a layer of cauliflower rice. Press the rice down firmly (the layer should be about 1cm high.)
Top with a handful of vegetables/filling of choice along one side of the sheet.
Start rolling the nori over the filling ingredients, using your fingers to press down as it rolls up. Wet your finger and dab the top end of the nori with water to seal. Allow the roll to sit for a minute or two, seam side down before slicing and enjoy with dipping sauce of choice.
If you prefer a softer rice texture then you can place the cauliflower rice in a microwaveable-safe bowl, cover, and heat for about five minutes to lightly steam the rice.You can substitute cauliflower rice for regular rice, quinoa, or any other type of grain.
