Mix cabbage, carrot and spring onion together in a salad bowl.
In a small bowl whisk the dressing ingredients together until smooth (add about 2-3 tsp water to create a creamy consistency that you can easily drizzle off the spoon.)
When ready to serve, pour the dressing over the salad and toss until well combined.
