Carrot Cake Energy Balls (Vegan, No Dates)

Easy raw vegan carrot cake energy balls for a tasty gluten free snack or Easter-inspired Dessert naturally sweetened with sweet raisins, infused with cinnamon and oatmeal flour for a chewy no-bake cake texture!

Ingredients

  • 85 g Carrot, chopped ~1 medium carrot
  • 1/2 cup + 2 tbs Oats or oat flour
  • 125 g Sultanas or raisins or dates
  • 50 g (1/2 cup) Walnuts (optional)
  • 3/4 tsp Cinnamon
  • 1/8 tsp Salt
  • Desiccated coconut to coat (optional)

Instructions

  • Place rolled oats in a blender or food processor and pulse into a flour consistency (see notes*) Add the remaining ingredients to the food processor and blend until it forms a dough consistency that you can easily form into balls.
  • Roll the mixture into balls (about 35g in size.) Place them in a bowl of desiccated coconut and roll/toss until well coated.
  • Place the balls in an airtight container in the fridge/freezer for at least 10 minutes to firm up if desired before consuming.

Notes

* (you can skip this step if you don't mind the texture of oats in your bliss balls or are using pre-made oat flour.)
