Beans are the hero ingredient in this recipe (don’t worry you can’t taste them at all) which give the cookies such a delicious chewy texture. They also provide a great source of plant-based protein making them the perfect on-the-go post workout snack or dessert.

Maple syrup has been used as the natural sweetener in this recipe but you could substitute this with rice malt syrup, or another liquid sweetener of choice. Soft dates could also be blended into the mixture as a completely whole-food natural sweetener alternative.
Peanut butter can be substituted with another nut butter of choice, either crunchy or smooth; however this may effect the flavour slightly and they obviously won’t be peanut butter cookies anymore hahaha.
You can use chickpeas instead of cannellini beans or any other type of bland white beans such as butter beans.
If you use certified gluten free oats then yes these cookies are totally gluten free! You could alternatively try substituting the oat flour for almond meal or buckwheat flour instead.
Yes, you can eat the cookie dough raw by the spoonful just as it is!
If you want to make it to just eat as cookie dough and not bake into cookies then don’t bother adding the baking powder to the mixture – that’s even less ingredients too!
Peanut butter protein cookies (vegan)
INGREDIENTS
- 1x can cannellini beans* drained & rinsed
- 3/4 cup oat flour or buckwheat flour
- 1/4 cup peanut butter or nut butter of choice
- 1/4 cup maple syrup
- 3/4 tsp baking powder optional
- 1/4 tsp salt optional: add if using unsalted peanut butter
Instructions
- Preheat oven to 180 degrees C and line a baking tray.
- In a large bowl mash the beans with a potato masher (or blend in a food processor) until as smooth as possible. Add the remaining ingredients and mix until thoroughly combined.
- Bake for 15-18 minutes or until lightly golden and slightly crispy on the outside.
